At The Walled Gardens Underground Restaurant Eddie serves an innovative 12-course botanical tasting menu for just eight guests per night in a relaxed, informal setting.

Its a bijou dining experience where everything is prepared and presented by Eddie alone, making for a unique, unforgettable fine dining experience.

Eddies award-winning cuisine combines wild, natural ingredients with innovative techniques to create an exciting menu with a focus on local, sustainable produce. All served in the relaxed converted dining space on the ground floor of Eddies home.

The fully vegetarian menu is at the forefront of plant-based cuisine and is also available as a 100% vegan option all served in this uniquely personal and relaxed setting.

Eddie also showcased his pioneering plant-based cooking on the BBC’s ‘Great British Menu’ in 2025 and previously won 'Chef of the Year' at the Manchester Food and Drink Awards.
